Super Spackle: How To Eat Lunch While On The Move
What is Super Spackle? Hang tight and you will find out. Everyone knows that breakfast and dinner are a must while backpacking. They are usually pretty easy to figure out too. But what about lunch? Do you stop to eat your lunch or do you keep hiking and snack all day? If you do stop is it a quick and easy lunch or do you pull out your stove and cook up a meal?This has been a tricky one for us. We usually would stop and have a quick meal. But we have found that it is harder to get going again after taking a longer break and it was time lost that we could have been hiking. On our search for lunch ideas, we had a few stipulations. We wanted it to be easy, and we wanted to be able to keep hiking. We also wanted something that would give us energy (calorie dense) to keep us going. The following recipe meets all of our requirements and is delicious. Our two-year-old loves it too!
Super Spackle
Adapted from “Ultralight Backpackin’ Tips,” written and illustrated by Mike Clelland. This has been a very useful book. It is funny, practical and an easy read. If you are interested in ultralight backpacking then this is your book. Clelland is also a cartoonist and illustrates his book so it helps to keep you entertained the whole way through.
Preparation time:
5 minutes – add an extra 5 minutes if making your own butters.
Number of servings (yield): 8-10
*We have just made our own almond and cashew butter. It tends to be cheaper when making our own. We have found diced almonds for $3.15 for 10 oz. and halved or pieces of cashews for $6.69 a pound at natural grocers.
Ingredients
- 1/2 cup unsalted almond butter*
- 1/2 cup unsalted cashew butter*
- 1/4 cup agave syrup (or honey)
- 2 tablespoons almond oil (or coconut oil)
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- Pinch of salt
Instructions
- Add all ingredients to a bowl and mix well. Mixing works best if all the ingredients are warm. We usually just put the bowl in warm water. A fork works great to smash up any clumps. For an electric mixer, mix on low for 30-60 seconds until well combined. Just be careful to not over mix or it will become very hard and the oils will separate.
- Store in a lightweight plastic container with a tight lid. Transfer from bowl to container while warm (it is so much easier).
- Mike recommends packaging it in a Platypus container** and using it like a squeeze tube, so you can eat it without using a spoon. No spoon makes it easier to eat while hiking and no spoon = less weight. 😉
- It doesn’t need refrigeration. (Think of it like peanut butter.)
**We have been using reusable baby food pouches. They work great. Mike also says a plastic water bottle would work too
